x + y = Dinner?: Taking the Mystery Out of the Cooking Equation


Why another cookbook?

There are, obviously, a vast number of cookbooks already on the market. Some of these are very specific - cookbooks for those with wheat allergies, cookbooks to represent a certain television personality, cookbooks to present a certain ethnicity, etc. Some are very comprehensive, but almost to a fault. That is, their intended audience is those who desire to become chefs - or at least to prepare gourmet cuisine on a regular basis. Some are intended for the busy and/or health-conscious home cook, but either assume she already knows how to cook or stick with one basic category of food, such as casseroles. What's missing is an overall how-to book designed for the "average" homemaker or homemaker-to-be.

This is the void x + y = Dinner? hopes to fill. It is designed to be a how-to-cook book, providing you with instruction in each skill the average home cook will need for everyday and special-occasion cooking - a "cooking school" cookbook, if you will. It does not include instruction for cooking with chafing dishes and other "fancies," as this is information that would simply get in the way of, or overwhelm, the average home cook. I have included some of the science behind the recipes and techniques wherever it's appropriate, as I believe that understanding this science is what really equips a cook to adapt and improvise.

The book includes a suggested course of study - questions for each chapter and a checklist of recipes I recommend completing before the course is considered "finished." This would be an excellent text for the cooking portion of a homeschooler's home economics education. It would also be helpful for many newlyweds. It is packed full of charts and reference information to make it useful even to the more experienced cook. The chapter questions and recipe checklist are reproducible for your family, so you may order only one. If you can, however, I recommend purchasing a copy for each daughter and allowing her to take notes in it and keep it for her hope chest.

As with any book, x + y = Dinner? has a certain slant. I believe it is important to eat quality food in order to properly nourish our bodies. In light of this, I have provided some basic information regarding "whole foods" nutrition and how to substitute these "real" ingredients for the less nourishing foods often found at the supermarket. You will be able to use this book just as easily with white flour as whole-grain flour! However, I did not want to overlook the basic information necessary for a cook to use whole grains and similar ingredients with confidence. Also, as a general rule, my family eats only "clean" meats, as found in Leviticus. We believe this is the healthiest way to eat. Because of this, I do not cook pork or shellfish, and you will not find them in this book. (I can't test the recipes!) If your family feels free to eat them, by all means eat them; but you will need to find another source for learning to cook them.
